Catfish Parmesan
2/3 cup Parmesan
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon paprika
1 egg, beaten
1/4 cup milk
4 catfish fillets
1/4 cup butter, melted
1/3 cup sliced almonds
Combine cheese, flour, salt, pepper, and paprika; stir well. Combine egg and milk; mix well. Dip fillets in egg mixture; dredge in cheese/flour mixture. Arrange fillets in Pam-sprayed, foil-lined baking pan. Sprinkle almonds over fillets, and drizzle with the melted butter.
Bake at 350° for 35 to 40 minutes or until fish flakes easily.
