Marinated Black-Eyed Peas
Ingredients:
1/2 c Olive Oil
1 c Celery; Chopped
1/4 c Red Wine Vinegar
1/2 c Red Onion; Chopped
1 ts Salt
1/2 c Green Bell Pepper; Chopped
1/4 ts Pepper
1 ea Jalapeno Pepper; Chopped
1 ea Clove Garlic, Crushed
30 oz Black-eyed Peas; Drained,2Cn
Instructions:
Mix the oil, vinegar, salt, pepper, and Garlic then pour the mixture over the remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours but no longer than 24 hours, stirring occasionally.
