Low Country Red Rice
5 slices of Bacon
2 cups cooked rice
3/4 cup chopped onion
2 cups canned tomatoes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp Hot Sauce
Cook Bacon, remove and crumble. Cook onions in bacon fat until tender. Add remaining items including bacon. Cook on low heat for 30-40 minutes. Keep Stirring, add water as needed.
