New York Cheesecake

6 wheatmeal biscuits, crushed
200g ricotta cheese (light is fine)
125g cream cheese (light is fine), softened
1/2 cup sweetened condensed milk (light is fine)
1/3 cup caster sugar
3 egg whites
200g mixed berries, washed


Preheat oven to 180 degrees Celcius (350 dgrees Farenheit).

Line 8 holes in a muffin pan with paper muffin cases.

Sprinkle crushed biscuit crumbs into the base of each muffin case.

Beat ricotta, cream cheese, condensed milk, sugar and egg whites together until well combined.

Spoon mixture into muffin cases, on top of biscuit crumbs.

Bake in preheated oven for 25 minutes or until set.

Allow to cool before serving, topped with mixed berries.


Serves: 8.
